A comforting breakfast potato hash featuring crispy potatoes, tender vegetables, and perfectly cooked eggs, topped with optional cheese and scallions.

Ingredients

  • 2 large potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 4 eggs
  • Salt and pepper to taste
  • Olive oil or butter for frying
  • Optional: shredded cheese, scallions for garnish

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes into the skillet and cook until they start to soften, about 10 minutes.
  3. Toss in the chopped onion and bell pepper and cook until vegetables are tender.
  4. Stir in the minced garlic and cook for another minute.
  5. Create 4 wells in the potato mixture and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set to your liking.
  7. Once cooked, season with salt and pepper, then sprinkle with shredded cheese and chopped scallions if desired.
  8. Serve the hash hot from the skillet.

Notes

For perfectly crispy potatoes, make sure your skillet is hot before adding them, and avoid overcrowding the pan.
