A hearty breakfast skillet filled with crispy potatoes, vibrant vegetables, and topped with eggs, perfect for a cozy morning.

Ingredients

  • 4 medium potatoes, diced
  • 1 bell pepper, chopped
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 eggs
  • Cheese (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the diced potatoes for about 10-15 minutes until tender but slightly crispy.
  3. Add the chopped bell pepper and onion, seasoning with salt and pepper. Cook until tender, about 5-7 minutes.
  4. Create small wells in the potato-vegetable mixture.
  5. Crack an egg into each well and cover to cook until desired doneness.
  6. Add cheese optionally over the top, cover again until melted.
