Quick and easy breakfast taquitos filled with scrambled eggs, sausage, and cheese, perfect for busy mornings.

Ingredients

  • 6 small flour tortillas
  • 4 large eggs
  • 1/4 cup milk
  • 1 cup cooked and crumbled breakfast sausage
  • 1/2 cup shredded cheese (such as cheddar or Monterey Jack)
  • Salt and pepper to taste
  • Salsa for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together the eggs, milk, salt, and pepper in a bowl until smooth.
  3. Scramble the eggs in a skillet over medium heat until fully cooked.
  4. Stir in the cooked sausage and shredded cheese until melted.
  5. Remove from heat and let the mixture rest.
  6. Spoon the egg mixture onto each tortilla and roll tightly.
  7. Arrange the taquitos seam-side down on a baking sheet.
  8. Bake for 15-20 minutes or until golden and crispy.
  9. Serve with salsa.
