A comforting and nostalgic broccoli cheese rice casserole that combines creamy soup, sharp cheddar, and tender broccoli.

Ingredients

  • 2 cups of cooked rice
  • 2 cups of broccoli florets
  • 1 can of condensed cream of mushroom soup
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of milk
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper to taste
  • Optional: breadcrumbs for topping

Instructions

  1. Preheat your oven to 350°F (175°C) to prepare for the glorious casserole that’s about to unfold.
  2. In a large mixing bowl, combine the cooked rice, broccoli florets, cream of mushroom soup, shredded cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.
  3. Stir everything together until all the ingredients are nicely coated in the creamy soup mixture.
  4. Carefully transfer the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  5. If you’re feeling adventurous, sprinkle breadcrumbs on top for a delightful crunchy layer.
  6. Pop the casserole into your preheated oven and bake for about 25-30 minutes, or until everything is heated through and bubbling on the edges.
  7. Let the casserole cool slightly before serving.

Notes

Use pre-cooked rice or leftover rice to speed things up. Feel free to add additional veggies for more color and nutrients.
