Delightful cookies with a gooey caramel center, combining the rich flavors of brown sugar and cinnamon.

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup caramel candies, unwrapped
  • 2 tablespoons milk
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, ground cinnamon, and salt in a separate bowl.
  5. Add the dry ingredients to the wet mixture until just combined.
  6. Combine the granulated sugar and ground cinnamon for rolling.
  7. Take about a tablespoon of dough, flatten it, place a caramel candy in the center, and wrap the dough around it.
  8. Roll the cookie ball in the cinnamon-sugar mixture and place it on the prepared baking sheet.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

These cookies are best enjoyed warm. Store leftovers in an airtight container at room temperature for up to a week.
