  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper to taste, then drizzle with olive oil.
  3. Bake the chicken in the preheated oven for 25-30 minutes.
  4. Prepare the bruschetta topping by combining diced tomatoes, chopped basil, minced garlic, balsamic vinegar, and a pinch of salt.
  5. Assemble the chicken by topping each breast with the prepared tomato mixture and sprinkle mozzarella cheese on top.
  6. Melt the cheese by returning the chicken to the oven for an additional 10 minutes.
  7. Serve warm and enjoy!

Notes

For a spicier kick, add red pepper flakes to the tomato mixture. Substitute cherry tomatoes with sun-dried tomatoes for a richer flavor.
