1/2 cup breadcrumbs
1/4 cup blue cheese, crumbled
1/4 cup buffalo sauce
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Additional buffalo sauce for tossing
Chopped green onions for garnish
Instructions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, breadcrumbs, crumbled blue cheese, buffalo sauce, egg, garlic powder, onion powder, and a sprinkle of salt and pepper.
Using your hands, form the mixture into small meatballs, about 1 inch in diameter.
Place the meatballs on the prepared baking sheet and bake for 20-25 minutes until golden brown.
