Delicious and spicy Buffalo Chicken Meatballs, perfect for game nights or a fun dinner.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup blue cheese, crumbled
  • 1/4 cup buffalo sauce
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Additional buffalo sauce for tossing
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, crumbled blue cheese, buffalo sauce, egg, garlic powder, onion powder, and a sprinkle of salt and pepper.
  3. Using your hands, form the mixture into small meatballs, about 1 inch in diameter.
  4. Place the meatballs on the prepared baking sheet and bake for 20-25 minutes until golden brown.
  5. Once cooked, transfer the meatballs to a bowl and toss with additional buffalo sauce.
  6. Serve hot, sprinkled with chopped green onions for garnish.

Notes

For a milder kick, serve with ranch or blue cheese dressing for dipping.
