A delicious and wholesome Buffalo Chicken Stuffed Zucchini dish that’s perfect for family gatherings.

Ingredients

  • 2 medium zucchinis
  • 1 cup cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center to create boats.
  3. Mix together the shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese until well combined.
  4. Season the mixture with salt and pepper. Then, fill each zucchini boat with the buffalo chicken mixture.
  5. Place the stuffed zucchinis on a baking sheet and drizzle with olive oil.
  6. Sprinkle the remaining cheddar cheese on top of each zucchini boat.
  7. Bake for 25-30 minutes or until the zucchini is tender and the cheese is bubbly.
  8. Garnish with chopped green onions before serving.

Notes

For a spicier kick, consider adding diced jalapeños or extra buffalo sauce. You can also use pre-cooked rotisserie chicken to save time.
