Delightful and fluffy squares of goodness, perfect for breakfast or a sweet treat, with a glaze that enhances their buttermilk flavor.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 cup buttermilk
  • Oil for frying
  • 1 cup powdered sugar for glaze
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix together the flour, granulated sugar, baking powder, salt, and cinnamon until well blended.
  2. Whisk Together Wet Ingredients: In another bowl, whisk together the melted butter, egg, and buttermilk until smooth and creamy.
  3. Mix Wet and Dry Ingredients: Blend the wet ingredients into the dry ingredients until just combined. Do not overmix! You want a lumpy batter full of love.
  4. Heat Oil for Frying: In a deep pot, heat oil to 350°F (175°C). Make sure you have enough oil to fully submerge the beignet squares.
  5. Fry Until Golden: Using a spoon or cookie scoop, drop the dough into the hot oil, frying until golden brown on all sides—about 2-3 minutes per batch.
  6. Drain and Cool: Remove the fried squares from the oil and let them drain on paper towels.
  7. Prepare the Glaze: In a medium bowl, mix powdered sugar, vanilla extract, and milk until smooth and glossy.
  8. Glaze the Beignet Squares: Dip the warm beignet squares into the glaze, allowing the sweet layer to set before serving.

Notes

Do not overcrowd the pot when frying for best results. Leftovers can be stored in an airtight container for up to 2 days or frozen for a month.
