A delicious and comforting butterscotch cake with a sweet crunch, perfect for gatherings and cozy afternoons.

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup butterscotch chips
  • 1 cup crushed graham crackers
  • 0.5 cup roasted chopped nuts (like pecans or almonds)
  • More butterscotch chips for topping
  • Whipped cream for serving
  • Fresh fruit for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt until fully combined.
  3. Beat butter with sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each. Stir in vanilla.
  5. Gradually add the dry ingredients to the wet mixture. Mix until just combined.
  6. Fold in butterscotch chips, graham crackers, and chopped nuts.
  7. Pour the batter into a greased 9-inch round cake pan.
  8. Sprinkle more butterscotch chips on top before baking.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let it cool in the pan for 10 minutes before transferring to a wire rack.
  11. Before serving, top with whipped cream and fresh fruit.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for a week. It can also be frozen for up to 3 months.
