  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Once al dente, drain and set aside.
  2. Season the chicken breasts generously with Cajun seasoning.
  3. Sear the chicken in a large skillet with olive oil until golden brown and no longer pink, about 6-7 minutes per side. Remove and let rest before slicing.
  4. Sauté the sliced bell pepper, onion, and minced garlic in the same skillet until tender, about 3-5 minutes.
  5. Create the sauce by stirring in the heavy cream and Parmesan cheese, simmering gently.
  6. Combine the cooked penne pasta and sliced chicken into the skillet, mixing everything to coat in the sauce. Season with salt and pepper.
  7. Serve the pasta hot, garnished with fresh parsley.

Notes

Marinate the chicken in Cajun seasoning for extra flavor. Adjust the spice level by adding jalapeños or cayenne pepper.
