  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Cook the rotini pasta according to the package directions. Drain and set aside.
  2. Sauté the chicken pieces in a large skillet with olive oil and Cajun seasoning until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.
  4. Stir in the diced red and green bell peppers, cooking for an additional 2-3 minutes until softened.
  5. Pour in the heavy cream and chicken broth, stirring to combine.
  6. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the sauce to thicken slightly.
  7. Add the cooked rotini pasta and stir to coat the pasta with the sauce.
  8. Gradually stir in the shredded cheddar cheese until completely melted and the sauce is smooth.
  9. Season with salt and pepper to taste, then garnish with chopped parsley before serving.
