Quick and flavorful Cajun shrimp fajitas packed with vibrant bell peppers, served in soft tortillas with a creamy jalapeño ranch.

  • 1 pound shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons Cajun seasoning
  • 1 lime, juiced
  • 4 flour tortillas
  • Creamy jalapeño ranch (for serving)
  • Salt and pepper, to taste
  • Garlic, minced (optional)

Instructions

  1. Prepare the shrimp and veggies: In a large bowl, combine the shrimp, sliced bell peppers, olive oil, Cajun seasoning, lime juice, salt, and pepper. Toss to coat.
  2. Sauté the mixture: Heat a large skillet over medium-high heat. Add the shrimp and pepper mixture. Sauté for 5-7 minutes, or until the shrimp are cooked through and the peppers are tender.
  3. Warm the tortillas: Warm the tortillas in a separate skillet or microwave until they’re soft and pliable.
  4. Serve the shrimp and peppers in the warmed tortillas topped with creamy jalapeño ranch.
