A flavorful breakfast burrito filled with creamy scrambled eggs, crispy potatoes, and spicy chorizo, all wrapped in a warm tortilla.

  • 4 large eggs
  • 1/4 cup milk
  • 1 cup diced potatoes
  • 1 cup cooked and crumbled chorizo or sausage
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 avocado, sliced
  • 1/4 cup salsa
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Cooking oil

Instructions

  1. Sauté the potatoes: In a skillet, heat some cooking oil over medium heat and add the diced potatoes. Cook until golden and tender, about 8–10 minutes.
  2. Whisk the eggs: In a bowl, whisk together the eggs, milk, salt, and pepper.
  3. Scramble the eggs: Pour the egg mixture into the skillet with the sautéed potatoes and scramble until cooked through, about 2–3 minutes.
  4. Add chorizo and cheese: Stir in the cooked chorizo, followed by the shredded cheese, mixing until melted.
  5. Warm the tortillas: In a separate pan, warm the tortillas over medium heat for about 30 seconds on each side.
  6. Assemble your burritos: Place a scoop of the egg mixture in the center of each tortilla, topping with avocado slices and salsa.
  7. Fold and serve: Fold the tortillas around the filling, tucking in the sides as you roll them up, and serve warm.
