Delicious and creamy Caramel Apple Cheesecake Bars layered with tender apples and topped with sweet streusel, perfect for autumn gatherings.

Ingredients

  • 2 cups of graham cracker crumbs
  • 1/2 cup of unsalted butter, melted
  • 1/4 cup of granulated sugar
  • 2 packages (8 oz each) of cream cheese, softened
  • 1/2 cup of granulated sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 2 large Granny Smith apples, peeled, cored, and diced
  • 1/4 cup of granulated sugar
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of nutmeg
  • 3/4 cup of quick-cooking oats
  • 1/2 cup of all-purpose flour
  • 1/2 cup of brown sugar, packed
  • 1/2 cup of cold unsalted butter, diced
  • 1/2 cup of caramel sauce for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar in a medium bowl. Press the mixture evenly into the prepared pan to create the crust. Bake for 8 minutes, then let it cool.
  3. Beat the cream cheese with 1/2 cup of granulated sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Pour this mixture over the cooled crust and spread evenly.
  4. Toss the diced apples with 1/4 cup of granulated sugar, cinnamon, and nutmeg until well coated. Spread the apple mixture evenly over the cheesecake layer.
  5. Mix the oats, flour, brown sugar, and diced cold butter in a bowl for the streusel topping. Use your fingers or a pastry cutter to combine until it resembles coarse crumbs. Sprinkle evenly over the apple layer.
  6. Bake for 30-35 minutes or until the cheesecake has set and the topping is golden brown. Allow to cool completely, then refrigerate for at least 2 hours before slicing into bars.
  7. Drizzle the bars with caramel sauce before serving.

Notes

Serve with whipped cream or vanilla ice cream. Store leftovers in the refrigerator for up to 4 days.
