A delightful cake that combines creamy cheesecake with spiced apple layers and rich caramel, perfect for autumn gatherings.

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 2 cups peeled and diced apples
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. Cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually mix in the dry ingredients alternately with buttermilk. Fold in the diced apples.
  6. Evenly divide batter among the cake pans and bake for 25-30 minutes until a toothpick comes out clean. Cool in pans.
  7. Beat cream cheese and powdered sugar until smooth. Add vanilla and mix until combined.
  8. Whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  9. Layer the cooled cakes with cheesecake filling in between each layer.
  10. Drizzle the caramel sauce over the top and sides of the cake. Chill for at least 1 hour before serving.

Notes

For added texture, use a mix of tart and sweet apples. Store leftovers airtight for up to 4 days.
