Delightful cookies that blend warm spices and soft sweetness of apples with luscious caramel.

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups chopped apples (peeled and finely diced)
  • 1 cup chewy caramel bits or chopped soft caramels
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats and set aside.
  2. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl. Set aside.
  3. Cream together the softened butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy, about 3-4 minutes.
  4. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped apples, caramel bits, and pecans (if using) until evenly distributed.
  7. Drop rounded tablespoons of cookie dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden and the centers are set.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be stored in an airtight container for up to 5 days or frozen for up to 3 months.
