Ingredients

  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 cup soft caramels or caramel sauce
  • 1 tsp instant espresso powder
  • 1/2 tsp vanilla extract
  • 8 oz semi-sweet or dark chocolate, chopped
  • 8 oz dark or milk chocolate, melted
  • Optional toppings: flaky sea salt, cocoa powder, or crushed espresso beans

Instructions

  1. Heat the heavy cream and butter over medium heat until it begins to simmer.
  2. Remove the saucepan from the heat and stir in the soft caramels, instant espresso powder, and vanilla extract until smooth.
  3. Add the chopped chocolate into the warm mixture and stir until fully melted and combined.
  4. Refrigerate the mixture for about 2 hours or until firm.
  5. Scoop small amounts of the mixture and roll them into balls.
  6. Dip each truffle into the melted chocolate for coating.
  7. Sprinkle with optional toppings before the chocolate hardens.
  8. Let the truffles cool completely before serving.

Notes

For a sweeter bite, opt for milk chocolate for coating. Customize with crushed nuts or flavored extracts if desired.
