Deliciously spiced cookies with a crunchy exterior and soft, chewy center, infused with ginger and cardamom for a cozy treat.

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cardamom
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • Granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Whisk together the flour, ground ginger, ground cardamom, baking soda, ground cloves, and salt.
  3. Cream together the softened butter and brown sugar until light and fluffy, about 2 minutes.
  4. Beat in the egg and molasses until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into 1-inch balls and coat each ball in granulated sugar.
  7. Place the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until golden brown around the edges.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to a week. Freeze cookie dough for up to 3 months.
