  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon grated ginger
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon black pepper

Instructions

  1. Peel the carrots using a vegetable peeler to remove the outer skin.
  2. Grate the carrots using a fine grater until they are shredded into thin strips.
  3. Place the grated carrots into a medium-sized bowl.
  4. In a small bowl, combine sesame oil, rice vinegar, and soy sauce.
  5. Add honey to the mixture and stir until fully dissolved.
  6. Grate fresh ginger and add it to the dressing.
  7. Pour the dressing over the grated carrots.
  8. Toss the carrots gently to ensure they are evenly coated.
  9. Sprinkle sesame seeds over the salad.
  10. Add black pepper to the salad.
  11. Chop cilantro and sprinkle it over the salad.
  12. Toss everything together one more time to mix thoroughly.
  13. Allow the salad to sit for a few minutes to let the flavors meld.
  14. Serve immediately or refrigerate for up to an hour before serving.
