Cauliflower Fried Rice

A healthier version of fried rice using cauliflower that delivers great flavor and a light meal.

Ingredients

  • 1 head cauliflower
  • 2 tablespoons oil (vegetable or sesame)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Remove the leaves and stem from the cauliflower, and chop it into florets. Pulse in a food processor until it resembles rice.
  2. Heat oil in a large skillet over medium heat. Sauté the onion and garlic until fragrant.
  3. Add the cauliflower and mixed vegetables; stir-fry for about 5 minutes until the cauliflower is tender yet crunchy.
  4. Push the cauliflower mixture to the side of the skillet and pour in the beaten eggs. Scramble until fully cooked.
  5. Mix everything together and add soy sauce, salt, and pepper. Let the flavors merge for a minute or two.
  6. Cook for another 2-3 minutes, then garnish with green onions before serving.

Notes

Great for meal prep or quick dinners. Can be paired with grilled chicken, shrimp, or tofu for extra protein.
