A comforting Italian dish made with fresh cauliflower, perfect for a guilt-free dining experience.

Ingredients

  • 1 head of cauliflower
  • 1 cup of all-purpose flour (or gluten-free alternative)
  • 1 egg
  • Salt to taste
  • Pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Steam the cauliflower until it becomes tender, about 10 minutes. Allow to cool.
  2. Blend cooled cauliflower in a food processor until it forms a smooth puree.
  3. Combine the cauliflower puree with flour, egg, salt, and pepper in a large mixing bowl, mixing until a soft dough forms.
  4. Roll the dough into small logs and cut into bite-sized pieces.
  5. Boil a pot of salted water, drop the gnocchi in, and cook for 2-3 minutes until they float to the top.
  6. Remove gnocchi using a slotted spoon and let them drain briefly.
  7. Plate your gnocchi with sauce of your choice and sprinkle with Parmesan cheese if desired.

Notes

Store leftover gnocchi in an airtight container for up to three days. For freezing, lay uncooked gnocchi in a single layer on a baking sheet until solid, then transfer to a freezer-safe bag.
