Cheddar Oven Baked Potato Skins

Deliciously crispy baked potato skins loaded with cheddar cheese and bacon, perfect for a comforting appetizer or side dish.

Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sliced green onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Sour cream (for serving, optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes clean under water and pierce them several times with a fork.
  3. Bake the potatoes directly on the oven rack for 45-60 minutes.
  4. Cool the potatoes slightly, then cut them in half and scoop out some flesh.
  5. Brush the insides of the potato skins with olive oil and season with salt and pepper.
  6. Place the skins back in the oven and bake for an additional 10-15 minutes.
  7. Remove the skins and fill them with cheddar cheese and crumbled bacon.
  8. Return to the oven for another 5 minutes until the cheese is melted.
  9. Garnish with green onions and serve hot with sour cream if desired.

Notes

For extra flavor, consider adding jalapeños or using different types of cheese.
