Rich and creamy cheesecake bars with a buttery graham cracker crust, perfect for any occasion.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9×9 inch baking dish.
  2. Combine graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl, then press into the bottom of the dish.
  3. Beat the softened cream cheese and 1/2 cup sugar together until smooth, then add eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and sour cream for the filling.
  5. Pour the cream cheese mixture over the crust in the baking dish.
  6. Bake for about 25-30 minutes until the center is set with a slight jiggle.
  7. Cool at room temperature, then refrigerate for at least 2 hours before slicing and serving.

Notes

Serve with fresh berries, chocolate sauce, or powdered sugar. Store leftovers in an airtight container for up to five days.
