A comforting and cheesy casserole featuring tender cheese tortellini, savory beef, and gooey mozzarella, enveloped in zesty enchilada sauce.

Ingredients

  • 1 package of cheese tortellini
  • 1 pound ground beef
  • 2 cups enchilada sauce
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef over medium heat, seasoning with salt and pepper.
  3. Combine the cooked beef with enchilada sauce and stir until fully mixed.
  4. Cook the tortellini in a large pot according to package instructions until al dente, then drain.
  5. Mix the cooked tortellini with the beef mixture in a large baking dish.
  6. Top with shredded mozzarella cheese.
  7. Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.
  8. Garnish with chopped parsley if desired before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or in the freezer for 2 months. For a kick, add jalapeños or chili powder to the beef mixture.
