  • 4 large flour tortillas (10-inch)
  • 1 cup cooked white rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup black beans, drained and rinsed
  • 1/2 cup pico de gallo
  • 1/2 cup sour cream
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh chopped parsley for garnish

Instructions

  1. Season the chicken: Toss the shredded rotisserie chicken with cumin, garlic powder, smoked paprika, salt, and pepper.
  2. Warm the tortillas: Wrap the flour tortillas in a damp paper towel and warm them in the microwave for 20-30 seconds.
  3. Layer the ingredients: On each tortilla, layer sour cream, cooked rice, the seasoned chicken, black beans, both cheeses, and pico de gallo.
  4. Fold the burritos: Fold the sides of the tortilla inward and roll it from the bottom up tightly.
  5. Cook the burritos: In a hot skillet, heat olive oil and cook the burritos seam-side down for 2-3 minutes on each side until golden brown.
  6. Rest and slice: Let the burritos rest for a minute, then slice diagonally and garnish with fresh parsley.
  7. Serve with accompaniments: Serve alongside extra pico de gallo and sour cream.
