  • 1 cup cottage cheese, well-drained
  • 1/4 cup milk (whole or low-fat)
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon salt
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon chopped fresh herbs (like parsley or chives, optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×5 inch loaf pan lightly with cooking spray or butter.
  3. Combine the well-drained cottage cheese, milk, and eggs in a large mixing bowl.
  4. Whisk together the all-purpose flour, baking powder, garlic powder, and salt in another bowl.
  5. Add the dry ingredients to the wet mixture gradually and stir until just combined.
  6. Fold in the shredded cheese and fresh herbs, if using.
  7. Transfer the batter into the prepared loaf pan, smoothing out the top.
  8. Bake for 35-45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  9. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve immediately.

Notes

Store leftovers in an airtight container for up to 3 days or refrigerate for up to a week. Freezes well for up to 3 months.
