A delicious fusion of classic grilled cheese and Mexican flavors, the Grilled Cheese Burrito is a satisfying comfort food perfect for sharing.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup sour cream
  • 1/4 cup nacho cheese sauce
  • 1 cup cooked Mexican rice
  • 1/2 cup diced onions
  • 2 tablespoons butter for grilling

Instructions

  1. Sauté the Beef and Onions: In a large skillet over medium-high heat, add ground beef and diced onions. Cook until the beef is browned and the onions are softened, about 8-10 minutes. Drain any excess fat.
  2. Add Flavor with Taco Seasoning: Sprinkle the taco seasoning over the beef mixture. Add 1/4 cup of water, stir well, and let it simmer for 3-4 minutes until thickened.
  3. Warm the Tortillas: Microwave or warm tortillas in a dry skillet for 15-20 seconds until soft.
  4. Build Your Burrito: Layer cheese, rice, beef mixture, nacho cheese sauce, and sour cream on each tortilla.
  5. Wrap It Up: Fold in sides and roll tightly from the bottom to top, placing seam-side down.
  6. Add Extra Cheese: Sprinkle shredded cheddar cheese on all sides of the burrito, pressing gently.
  7. Grill Your Burrito: Heat butter in a skillet and grill burrito cheese-side down for 3-4 minutes; flip and cook the other side until crispy.
  8. Serve and Enjoy!: Cut in half and serve immediately.
