  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons hot honey
  • 4 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon butter
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 jalapeño, seeded and chopped
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Make the Spicy Jalapeño Cream Sauce: In a bowl, combine sour cream, mayonnaise, jalapeño, lime juice, minced garlic, salt, and cayenne pepper. Stir well and refrigerate.
  2. Marinate the Chicken: In another bowl, whisk together olive oil, chili powder, garlic powder, smoked paprika, salt, black pepper, and hot honey. Add the chicken breasts and toss to coat. Let sit for 10 minutes.
  3. Cook the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken and cook for 6–7 minutes per side until golden brown. Remove and slice thinly.
  4. Prepare for Quesadillas: Wipe the skillet and reduce heat to medium-low. Add butter to melt.
  5. Assemble the Quesadilla: Place one tortilla in the skillet, sprinkle half of the cheese over it, add sliced chicken, top with remaining cheese, and cover with another tortilla.
  6. Cook the Quesadilla: Cook for 2–3 minutes per side until golden and cheese is melted, pressing down with a spatula.
  7. Slice and Serve: Transfer the quesadilla to a cutting board, slice into wedges, and serve hot with the spicy jalapeño cream sauce.
