  • 1 pound shrimp, peeled and deveined
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup mixed vegetables (bell peppers, onions, peas)
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter
  • 1 cup milk
  • Salt and pepper to taste
  • Garlic powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the vegetables in melted butter until tender.
  3. Combine the sautéed vegetables with shrimp, rice, cheese, and milk.
  4. Prepare a greased casserole dish and pour in the mixture.
  5. Add breadcrumbs over the top for crunch.
  6. Bake in the oven for 25-30 minutes until bubbly and golden.
