A delightful cherry pie that captures the essence of summers spent with family, featuring a sweet and tart filling baked in a buttery crust.

Ingredients

  • 2 cups fresh or frozen cherries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 pie crust (store-bought or homemade)
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the cherries, sugar, cornstarch, lemon juice, and vanilla extract in a large bowl.
  3. Roll out your pie crust and place it in a pie dish.
  4. Dot the cherry filling with small pieces of butter.
  5. Cover the filling with a second pie crust and crimp the edges to seal.
  6. Brush the top of the pie with beaten egg.
  7. Bake for 30-35 minutes until the crust is golden brown and the filling is bubbly.
  8. Cool for at least 15 minutes before slicing.

Notes

Serve warm with vanilla ice cream or chilled with whipped cream. Store leftovers tightly covered in the refrigerator for 3-4 days or freeze for up to 2 months.
