  • 1/2 cup pure maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • Extra granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the pure maple syrup, eggs, and vanilla extract, beating until well combined.
  4. Whisk together the all-purpose flour, baking soda, ground cinnamon, and salt in a separate bowl.
  5. Combine the dry ingredients into the wet mixture, mixing on low speed until just combined.
  6. Fold in the chopped pecans or walnuts if using.
  7. Scoop out portions of dough and roll them into balls, then roll in extra granulated sugar.
  8. Transfer the dough balls to the prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
