A comforting dish that combines savory chicken, colorful vegetables, and fluffy rice, all tossed together with soy sauce for a delightful meal.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet or wok over medium-high heat.
  2. Add the mixed vegetables to the hot skillet and cook until tender.
  3. Push the veggies to the side of the pan, pour the beaten eggs into the empty side, and scramble until just set.
  4. Add the cooked rice and diced chicken, breaking up any clumps of rice.
  5. Pour the soy sauce over the mixture, stirring everything together.
  6. Add the chopped green onions, salt, and pepper to taste.
  7. Stir-fry for another 3-5 minutes until everything is heated through.
  8. Serve hot from the pan.

Notes

Use day-old rice for best results and keep the heat high to avoid mushiness.
