Garlic Parmesan Chicken Meatloaf

A lighter twist on the classic meatloaf, packed with flavor from garlic, parmesan, and mozzarella.

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup garlic powder (for seasoning on top)
  • 1/4 cup additional grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Combine the ground chicken, breadcrumbs, 1/2 cup grated Parmesan cheese, mozzarella cheese, parsley, minced garlic, and chopped onion in a large mixing bowl.
  3. Whisk together the eggs, milk, Worcestershire sauce, Italian seasoning, salt, and black pepper until well combined.
  4. Pour the egg mixture into the bowl with the chicken mixture and gently mix until everything is combined.
  5. Transfer the meatloaf mixture onto the prepared baking sheet or into the loaf pan and shape it into a loaf.
  6. Mix together the garlic powder and the additional 1/4 cup grated Parmesan cheese, then sprinkle this mixture evenly over the top of the meatloaf.
  7. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove from the oven and let it rest for about 10 minutes before slicing.
  9. Serve warm with your favorite sides.

Notes

To avoid a dry meatloaf, do not overmix and ensure proper binding agents are used.
