Delicious chicken quesadillas filled with melted cheese, tender chicken, and sautéed bell peppers and onions, offering endless customization options.

Ingredients

  • 2 tortillas
  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup bell peppers, sliced
  • 1/2 cup onions, sliced
  • 1 tablespoon olive oil
  • Sour cream and salsa for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sliced onions and bell peppers to the skillet and sauté until tender, about 5 minutes.
  3. Place one tortilla in the skillet. Layer it with shredded chicken, sautéed vegetables, and shredded cheese.
  4. Top with the second tortilla.
  5. Cook until the bottom tortilla is golden brown, about 3-4 minutes.
  6. Carefully flip the quesadilla to cook the other side until it’s golden and the cheese has melted, about another 3-4 minutes.
  7. Remove from heat, cut into wedges, and serve with sour cream and salsa.

Notes

For extra crispiness, use less filling and press down gently while cooking. Leftover quesadillas can be stored for up to 3 days.
