Chicken Quesadilla

A delightfully crispy Chicken Quesadilla filled with spiced chicken and gooey cheese, perfect for any gathering.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add 1 tablespoon of olive oil to the skillet and allow it to heat up.
  3. Season both sides of the chicken breasts with the spices.
  4. Place the seasoned chicken breasts in the hot skillet and cook for 6-7 minutes per side.
  5. Remove the chicken from the skillet and allow it to rest for 5 minutes.
  6. While the chicken rests, chop 1/4 cup of fresh cilantro.
  7. Shred the cheddar and Monterey Jack cheese.
  8. Once the chicken has rested, slice it into thin strips.
  9. Heat a separate skillet over medium heat.
  10. Place a flour tortilla in the skillet and cook for 1-2 minutes.
  11. Flip the tortilla over and sprinkle cheese onto one half.
  12. Add a portion of the sliced chicken on top of the cheese.
  13. Sprinkle chopped cilantro on top of the chicken.
  14. Fold the tortilla in half.
  15. Cook the quesadilla for 2-3 minutes per side.
  16. Remove the quesadilla and set it aside.
  17. Repeat the process with the remaining ingredients.
  18. Cut each quesadilla into wedges.
  19. Serve the quesadillas with a side of sour cream and salsa.

Notes

For extra flavor, marinate the chicken for a few hours. Feel free to experiment with different cheeses.
