A delightful Italian-American dish featuring golden-browned chicken wrapped in savory prosciutto and infused with fragrant sage.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 slices of prosciutto
  • 8 fresh sage leaves
  • 1 cup all-purpose flour
  • 1/2 cup white wine
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lay out the chicken breasts on your workspace and season each side with salt and pepper.
  3. On each chicken breast, place 2 slices of prosciutto and 2 sage leaves.
  4. Dredge each chicken breast in flour, shaking off any excess.
  5. In a large skillet, heat olive oil and butter over medium-high heat until bubbling.
  6. Carefully add the chicken to the skillet. Cook for 4-5 minutes on each side until golden brown.
  7. Remove the chicken from the skillet and pour in the white wine, scraping up any bits stuck on the bottom.
  8. Return the chicken to the skillet, cover, and place it in the preheated oven. Bake for 10-15 minutes.
  9. Once cooked, serve the Chicken Saltimbocca warm.

Notes

Serve with creamy mashed potatoes or a fresh arugula salad. Store leftovers in an airtight container in the refrigerator for 3 days.
