  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste
  • 4 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Tahini sauce or yogurt for drizzling

Instructions

  1. Prepare the Marinade: In a bowl, combine olive oil, cumin, coriander, paprika, garlic powder, turmeric, salt, and pepper.
  2. Marinate the Chicken: Add the sliced chicken to the marinade and mix well. Allow it to marinate for at least 30 minutes.
  3. Cook the Chicken: Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked.
  4. Assemble the Base: In serving bowls, layer the cooked rice or quinoa as the base.
  5. Add the Chicken and Veggies: Top the rice or quinoa with the cooked chicken, then add cherry tomatoes, cucumber, red onion, and parsley.
  6. Drizzle and Serve: Drizzle generously with tahini sauce or yogurt before serving.

Notes
