A comforting low-carb dish combining tender chicken, sautéed mushrooms, and fresh spinach, topped with melted cheese.

  • 2 cups fresh spinach, chopped
  • 2 cups mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes, or until they are soft and browned.
  3. Add the chopped spinach to the skillet. Sauté for an additional 2-3 minutes, or until the spinach is wilted.
  4. In a mixing bowl, season the chicken pieces with garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix well to coat the chicken evenly.
  5. Spread the seasoned chicken in a large baking dish in an even layer. Top with the sautéed spinach and mushrooms.
  6. Sprinkle the shredded mozzarella cheese evenly over the top, followed by the grated Parmesan cheese. Add red pepper flakes if desired.
  7. Cover the baking dish with aluminum foil and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  8. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden brown.
  9. Let it cool for a few minutes before serving.

Notes

Pairs well with a crisp green salad or a side of roasted cauliflower. Store leftovers in an airtight container in the refrigerator for up to 3 days.
