A quick and hearty one-pot meal that combines the vibrant flavors of tacos with comforting pasta, perfect for family dinners.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 8 oz pasta shells
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Cook your pasta by following package instructions. Drain and set aside.
  2. Sauté the chicken with taco seasoning, salsa, black beans, corn, and chicken broth in a skillet over medium heat.
  3. Combine the pasta shells with the chicken mixture, mixing well.
  4. Melt in the shredded cheese until it becomes gooey.
  5. Season with salt and pepper to taste.
  6. Serve warm with chopped cilantro if desired.

Adjust flavors to your liking and feel free to use rotisserie chicken to save time.
