A delightful medley of tender chicken, fresh zucchini, and cherry tomatoes, baked to perfection for a comforting family meal.

Ingredients

  • 2 chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the diced chicken, sliced zucchinis, halved cherry tomatoes, diced onion, and minced garlic in a large mixing bowl.
  3. Drizzle with olive oil and season with Italian seasoning, salt, and pepper. Toss until coated.
  4. Transfer the mixture to a baking dish, spreading it evenly.
  5. Sprinkle shredded cheese on top (if using).
  6. Bake in the preheated oven for 25-30 minutes, until the chicken is cooked and veggies are tender.
