  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Mix the Marinade: In a bowl, combine olive oil, lime juice, lime zest, minced garlic, chili powder, ground cumin, paprika, salt, and pepper.
  2. Marinate the Chicken: Rub the spice mixture evenly over the chicken breasts and marinate for at least 30 minutes.
  3. Preheat the Grill/Oven: Preheat your grill to medium-high heat or your oven to 200°C (400°F).
  4. Grill the Chicken: Place the marinated chicken on the grill and cook for 6 to 8 minutes on each side until fully cooked.
  5. Rest the Chicken: Remove the chicken from the heat and let it rest for about 5 minutes.
  6. Garnish & Serve: Slice the chicken, garnish with cilantro, and serve with lime wedges.

Notes

For best flavor, marinate the chicken overnight. Serve with cucumber salad or in tacos.
