Soft, chocolatey brioche buns filled with whipped cream, perfect for breakfast or a sweet treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 packet active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup heavy cream
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the Dry Ingredients: In a mixing bowl, combine the all-purpose flour, cocoa powder, sugar, and salt. Mix well to ensure all the dry ingredients are evenly distributed.
  2. Activate the Yeast: In a separate bowl, dissolve the active dry yeast in warm milk and let it sit for about 5 minutes until it becomes foamy.
  3. Mix Wet Ingredients with Yeast: Add the melted butter and eggs to the yeast mixture. Gently whisk them together until combined before pouring this mixture into the bowl with the dry ingredients.
  4. Knead the Dough: Knead the dough by hand or using a mixer fitted with a dough hook until it becomes smooth and elastic—this usually takes about 10 minutes. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about an hour or until doubled in size.
  5. Preheat the Oven: After the dough has risen, preheat your oven to 350°F (175°C).
  6. Shape the Buns: Punch down the risen dough gently and divide it into small portions. Shape each piece into a bun and arrange them on a baking sheet lined with parchment paper.
  7. Bake the Buns: Bake in your preheated oven for 15-20 minutes until puffed up and cooked through.
  8. Whip the Cream: While the buns are baking, whip the heavy cream with powdered sugar and vanilla extract in a chilled bowl until soft peaks form.
  9. Split and Stuff the Buns: Once cooled, carefully split the buns open and generously stuff with the whipped cream.
  10. Serve and Enjoy: Serve the Chocolate Brioche Maritozzi immediately, perhaps with cocoa powder or chocolate shavings.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 2 days. You can also freeze the unbaked dough.
