A rich and creamy chocolate mousse filling perfect for elevating cakes.

Ingredients

  • 1 cup heavy whipping cream
  • 1 cup semisweet chocolate chips
  • 3 large eggs (separated)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the chocolate chips in a double boiler or microwave until smooth. Allow to cool slightly.
  2. Whip the heavy cream in a separate bowl until stiff peaks form.
  3. Whisk the egg whites in another bowl until soft peaks form, gradually adding sugar until stiff peaks form.
  4. Stir the egg yolks and vanilla extract into the melted chocolate.
  5. Fold the whipped cream into the chocolate mixture until combined.
  6. Gently fold in the whipped egg whites until no white streaks remain.
  7. Use immediately as a filling for cakes or spoon into cups for serving.

Notes

Best stored in an airtight container in the refrigerator for 2-3 days. Stir gently before serving.
