Ingredients

  • 3 eggs
  • 1/4 cup sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Melt the dark chocolate in a heatproof bowl over a pot of simmering water, ensuring the bowl doesn’t touch the water. Stir until fully melted, then let it cool slightly.
  2. Whisk the eggs and sugar together until pale and fluffy.
  3. Combine the melted chocolate into the egg mixture, folding gently to maintain airiness.
  4. Whip the heavy cream with vanilla and a pinch of salt until soft peaks form.
  5. Incorporate the whipped cream into the chocolate mixture, folding gently.
  6. Chill the mousse in the refrigerator for at least 2 hours before serving.

Notes

For added flavor, consider adding coffee liqueur or orange zest. Serve with fresh berries or a drizzle of raspberry sauce.
