A light and moist Christmas Almond Cake infused with subtle almond flavor, perfect for the holiday season.

Ingredients

  • 1 cup almond flour
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. Combine the almond flour, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for about 25-30 minutes, or until golden brown.
  8. Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  9. Serve as is or with whipped cream on top.
