Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners to prepare for your mini cheesecakes.
  2. Mix crushed cookies with melted butter until well combined. Press this mixture firmly into the bottom of each cupcake liner to form a sturdy crust.
  3. Beat together the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
