A simple yet delicious grilled chicken dish marinated in lime and fresh cilantro, perfect for summer barbecues and family dinners.

  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Prepare the Marinade: In a bowl, whisk together the lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper until well mixed.
  2. Marinate the Chicken: Place your chicken breasts in a sturdy plastic bag and pour the marinade over them. Seal the bag tightly and massage the marinade into the chicken.
  3. Refrigerate for at least 30 minutes or up to 2 hours.
  4. Preheat the Grill: Get the grill fired up to medium-high heat.
  5. Grill the Chicken: Remove the chicken from the marinade and place on the grill. Cook for 6-7 minutes on each side or until cooked through.
  6. Let Rest Before Slicing: Once grilled, let the chicken rest for a few minutes, then slice and serve.

For extra flavor, consider letting the chicken marinate overnight. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F.
