  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, baking soda, and salt in a bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract.
  5. Mix gradually the flour mixture into the wet ingredients.
  6. Combine the cream cheese, powdered sugar, and cinnamon until smooth.
  7. Scoop a tablespoon of cookie dough and flatten it.
  8. Wrap cookie dough around a teaspoon of cheesecake filling.
  9. Bake for 10-12 minutes until golden.
  10. Cool cookies on a wire rack before serving.

Notes

For best results, ensure butter and cream cheese are at room temperature. Store in an airtight container for up to 3 days.
