Deliciously fluffy muffins topped with a crunchy cinnamon-sugar streusel, perfect for breakfast or snacks.

  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup all-purpose flour (for streusel)
  • 1/3 cup granulated sugar (for streusel)
  • 1/2 teaspoon ground cinnamon (for streusel)
  • 1/4 cup unsalted butter, cold and cubed (for streusel)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. Combine the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt in a large bowl. Mix until well blended.
  3. Whisk together the melted butter, vegetable oil, milk, eggs, and vanilla extract in a separate bowl until smooth.
  4. Add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing.
  5. Prepare the streusel topping by mixing the flour, granulated sugar, and cinnamon in a medium bowl. Add the cold, cubed butter and mix until coarse crumbs form.
  6. Spoon the muffin batter evenly into the prepared muffin cups, filling each about 2/3 full.
  7. Evenly distribute the streusel topping over each muffin, pressing it lightly into the batter.
  8. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted comes out clean.
  9. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store muffins in an airtight container at room temperature for up to three days. For longer storage, freeze them wrapped in plastic wrap.
